Should we do the SaaS Adventure at the latest version of Laravel 9.* or 6.*?

Before to start this journey of the SaaS Adventure would you recommend me to build it with the latest version or the same from the videos?

Personally I would go with Laravel 9. Ending with Laravel 6, Laravel will no longer do LTS versions. you can see the release dates, bug fixes and security fixes under the support policy of the releases section of the documentation.

It might be more work on your part using a newer version than the course iself, but I'd see that as another useful learning step. It will also make you search the documentation more should you find something that works in the course but not in the latest version.
